This
is a great dish to serve when you want to invite someone for a unique
breakfast. Easy and delicious. Served with coffee, tea and a simple
fruit salad. This will impress your guests. This is a "Parsi"
dish. Parsis are Indians who came from Persia originally.
4 Eggs, Whisked till fluffy
2 table spoons Butter or oil
1 large Onion, finely chopped
1 teaspoon Cumin
2 Garlic cloves, finely chopped or 1 teaspoon garlic paste
2 Green chilies, finely chopped
1 Tomato, finely chopped
Salt to taste
3-4 Mint leaves, chopped
2 table spoons Cilantro, chopped finely
1. Heat butter or oil in a frying pan, add chopped onion and fry until
golden brown.
2. Add the cumin seeds, garlic and green chilies, fry for a few
minutes. Now add tomatoes, mint leaves and cilantro.
3. Mix in the whisked eggs and cook over a medium heat until they
become light and fluffy.
4. Serve immediately, over hot toast or eat with a slice of your
favorite bread.
