PEAS
USAL
- 1 bag of Frozen Peas
- Few Kaddipatta
- 1/2 cup of chopped Coriander
leaves
- 2 teaspoons Cumin powder
- 1 teaspoon Coriander powder
- 1 teaspoon Red Chili powder
- 1/2 teaspoon Turmeric powder
- 3 teaspoons Sugar
- 3 tablespoons Oil
- Salt to taste

- For the ground paste
- 1/2 cup freshly grated
Coconut or Unsweetened Dried Coconut
- 2 teaspoons Cumin
seeds
- 2 Green Chilies - Serrano
for extra hotness or use Jalapeno chilies
- 3 teaspoons Maharashtrian
Goda Masala
- 2 tablespoons
Coriander leaves
Grind the above in a mixer and
make a paste. Keep aside.
Heat the oil. Add asafoetida,
black mustard seeds and cumin seeds. Add the peas. Now add the
Kaddipatta. salt, cumin powder. coriander powder, red chili powder. Sauté.
now add the ground paste and sugar. mix well. Add freshly chopped
coriander leaves.
Maharashtrian
Goda Masala
4 cups
coriander seeds
1 cup dry coconut
1/2 cup white sesame seeds
1/2 cup black sesame seeds
1/4 cup cumin seeds
4-5 teaspoon caraway seeds (black cumin seeds)
2 teaspoon asafoetida
1-2 stick of cinnamon
3-4 cloves
1 black cardamom
3 dry red chilies
1 teaspoon turmeric powder & salt to taste
Roast
all the ingredients except coconut & coriander seeds with a little
amount (approx 1 teaspoon) of oil. Roast coconut & coriander seeds
separately without oil. Now grind all these items. Let it cool &
store in an airtight container.
This masala is used in many Maharashtrian dishes and is just like
garam masala and can be used in curries or rice preparations .
