Watermelon-
Cashew and Pistachio Barfi

For Red Cashew Barfi
Ground Cashew Powder - 2 cups
Sugar - 1 cup
Water - 1/2 cup
Ghee - 2 tablespoons
Few drops of Red food color
Grind the
cashew in a food processor. Boil the sugar in water till it forms a
one thread syrup. Reduce the flame and add the ground cashew and mix
it well. Add the red color. The dough will resemble a soft dough. Pour
the dough on a ghee greased surface and knead the dough well. Keep
aside.
For White
Cashew Barfi
Ground Cashew Powder - 1 cup
Sugar - 1/2 cup
Water - 1/4 cup
Ghee - 1 tablespoon
Grind the
cashew in a food processor. Boil the sugar in water till it forms a
one thread syrup. Reduce the flame and add the ground cashew and mix
it well. The dough will resemble a soft dough. Pour the dough on a
ghee greased surface and knead the dough well. Roll the dough with a
rolling pin into a rectangular shape. Keep aside.
For
Pistachio Barfi
Ground
Unsalted Pistachio Powder - 1cup
Sugar - 1/2 cup
Water - 1/4 cup
Ghee - 1 tablespoon
Few drops of Green food color
Grind the
pistachios in a food processor. Boil the sugar in water till it forms
a one thread syrup. Reduce the flame and add the ground pistachios and
mix it well. Add the green color. The dough will resemble a soft
dough. Pour the dough on a ghee-greased surface and knead the dough
well. Keep aside. Roll the dough with a rolling pin into a rectangular
shape.
Black Raisins 2
– 4 tablespoons
- Make the
pistachio barfi and the 2 cashew barfis as specified in the
recipe above.
- Roll out the
pistachio barfi and the white cashew barfi with the help of a
greased rolling pin on a sheet of plastic wrap to rectangular
shape and 1/8" thickness. Make them the same size.
- Make a roll
of the cashew barfi into a cylinder shape same size in length as
the longer side of the rectangle.
- Place
the red cashew cylinder at the very top of the long side of
the white cashew rectangle. Roll the cashew cylinder roll
into the white cashew rectangle. Roll to make sure it is nice and
smooth.
- Now place
the above roll onto the green pistachio rectangle.
Roll tightly. Roll to make sure it is nice and smooth.
- Cut into 1/2
inch pieces. And cut the round discs into half to resemble a half
moon. Add black raisins onto the red part of the cashew barfi part
to resemble a watermelon. Serve.
